Chocolate Peanut Balls for National Grain-Free Day

Chocolate Peanut Balls for National Grain-Free Day
February 21st is recognized as National Grain-free day, apparently.

There are some fantastic grain-free dishes worth trying. Some of our favourite desserts are grain-free (though definitely not sugar or fat free )

Here is a recipe for no-bake chocolate peanut butter balls. YUM! Do let us know if you try them or if you have any other favourite grain-free recipes.

No-Bake Grain-free Chocolate Peanut Butter Balls:

INGREDIENTS
1 cup natural creamy peanut butter
⅓ cup oat flour finely ground
¼ cup coconut flour
¼ cup pure maple syrup
½ cup chocolate chips
1 tbsp coconut oil

INSTRUCTIONS
In a medium bowl add the the creamy peanut butter, oat flour, coconut flour and maple syrup. Mix until fully combined.
Using a cookie scoop or a spoon, scoop and roll 15 peanut butter balls. Place them on a cookie sheet lined with parchment paper and set them in the fridge.
Now, in a small bowl, melt the chocolate chips and coconut oil in the microwave. Microwave in 15 second increments, stirring each time, until fully melted.
Dip each ball in chocolate. Use a fork to dip and cover the peanut butter bites in chocolate. Use another fork to help place them on the cookie sheet. Top each ball with sea salt.
Set the peanut butter bites back in the fridge anywhere from 15-45 minutes until the chocolate has hardened. Enjoy!
